When cleaning a Cast Iron Pan, never ever soak it in water.
To clean a cast iron pan, use a damp paper towel with table salt on it as an abrasive. Gently scour the pan with the paper towel. Make sure to remove all salt form the pan, you can quickly rinse the pan under running water, but dry immediately and then heat the pan over medium heat and apply a thin layer of vegetable shortening. This will protect the surface of your cast iron pan and create a nice patina.

I also make sure there are 'bar mops' available to keep the kitchen clean and tidy. There are a lot of online websites that sell to the food and beverage industry that you can purchase from at affordable rates.
